We done the C2C last year and used tynebridge bike hire for our baggage handlers and they were amazing, couldnt ask for a nicer chap and help on the ride.

This year we're doing the Coast and Castles route up to Edinburgh but struggling for baggage handlers up that way, does anyone know a firm who deal on this route?

I don't know how much stuff you want to transport, and even whether you want panniers, but please think about a trailer - especially a Carry Freedom trailer.

Look at www.carryfreedom.com and seriously think about it. I bought mine from www.wiggle.co.uk

A two wheeled trailer has little or no weight at the nose, is hardly noticeable on the bike, and just tows faithful and true behind you. I have a suitcase fixed to mine and it holds all I need.

Yes, a weight needs to be lifted up slope A, at speed B, for as long as time C. But it's so much easier than panniers. The weight isn't on the bike, it's behind you.
